Formaggio a pasta tenera, dal lieve colore giallo paglierino e dall'invitante occhiatura (i buchi, per intenderci) ben distribuita. Le forme di medie dimensioni stagionano su assi di legno per circa 60 giorni, accudite e spazzolate periodicamente. Dolce ed equilibrato, con una gradevole punta di acidità e note aromatiche di burro fresco e fieno, difficilmente ci si ferma a un primo assaggio.

Nostrale significa "formaggio di casa nostra", un nome generico che indica moltissime produzioni dell'arco alpino cuneese, ognuna con le sue peculiarità, ma accomunate in origine dal paesaggio montano e dalla monticazione, lo spostamento della mandrie in pascoli d'alpeggio nel periodo estivo.

Prodotto con il latte cuneese, come vuole la tradizione. Perfetto per molti usi in cucina, consigliato per la preparazione di ottimi toast.
